Fish that grow in natural flowing water, with seasonal cycles and a natural food base, develop differently from fish kept in closed pools with controlled temperature and artificial feed. We Give Caviar the Most Valuable Thing — Time
Our sterlet begins producing caviar from the age of three, while sturgeon mature from seven to nine years. The oldest beluga in our stock is over 25 years old and is still active.
In industrial production, every additional year means extra costs, so fish are accelerated: the water is heated and feeding is intensified. We chose to focus on taste rather than speed. Each fish matures at its own pace, and that is why the taste of our caviar is more complex and deeper. When you buy black caviar from the producer, you receive this time.
Freshness: Only a Few Hours Between the Fish and the Tin
The caviar is salted and sealed in tins on the same day it is harvested. Only a few hours pass between the fish and the sealed tin, and it is within this window that the texture of the eggs is formed and the subtle flavor notes are preserved — notes that disappear during long storage before packaging.

The full production cycle — from genetics and breeding to packaging — is under our control. We have the status of a breeding reproducer in five areas and work with genetically pure sturgeon lines.
Every batch of caviar undergoes independent laboratory control: microbiology, toxins, and radionuclides. The products have CITES permission and are certified for supply to EU countries and the USA. Each tin has batch marking, so the origin can be traced all the way back to a specific fish.

Golden Caviar: A Rare Product in Ukraine
Our stock includes rare albino sterlet. This is a natural genetic mutation that appeared on its own — it was not purchased or artificially bred. For years, we learned how to reproduce it, and today we are the only producer in Ukraine making golden albino sterlet caviar.
Amber-colored eggs with a creamy golden shade and a buttery taste with a subtle nutty note. The volume varies every year because it depends on the number of such fish in the stock during a specific season. If you want to buy golden caviar, it is better not to wait: the quantity is always limited.
Returning Sturgeon to the Danube
Four sturgeon species from our stock — beluga, sturgeon, sevruga, and sterlet — are listed in the Red Book of Ukraine. Wild populations have been damaged by poaching, and legal aquaculture is not only a way to produce caviar, but also a way to preserve the species.
Every year, together with the Danube Biosphere Reserve, we release juvenile sturgeon into the Danube. During the operation of the complex, more than 150,000 juvenile sturgeon have returned to the river. By buying legal caviar, you make your own contribution.
